So Valentine’s Day is a month away and that means red velvet! I love red velvet cake with cream cheese frosting. I prefer to stay dairy-free most of the time so I wanted to make a paleo fudge to get my red velvet fix. This recipe features Youfreshnaturals Red Velvet Cashew Coconut Butter, which is a seasonal flavor. It is super easy and fast to make and a great dessert to make for your loved ones on Valentine’s Day!
Ingredients
- 1 cup coconut oil melted
- 1 cup Youfreshnaturals Red Velvet Cashew Coconut Butter
- 1/2 cup maple syrup
- 1 tbsp grass-fed butter or ghee melted
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 3 tsp beet juice (to give red color)
- pinch of salt

Instructions
- Put all ingredients in a food processor and mix well
- Be careful not to leave food processor running too long or mixture will become clumpy
- Pour into a breadpan and place in freezer
- After 10-15 minutes, remove from freezer and cut into pieces
- The leftover fudge can be stored in the refrigerator
