I haven’t ate fettuccine alfredo in years (since before going paleo in February 2012). Now that I’ve let myself indulge in the wonderfulness that is Cappello’s (cappellosglutenfree.com), I’ve started eating some of my childhood favorites again. Cappello’s products are unbelievable. They’re gluten-free, grain-free and out-of-this-world delicious. I got their multipack that comes with fettuccine, lasagna sheets, & gnocchi. I also got their cookie dough (which is paleo & vegan-friendly). All of their products are truly outstanding. I do have to mention though, even though they are paleo-friendly, these should still be considered treats and not everyday staples in your diet. But hey, sometimes a person just needs some pasta in their life and this is a perfect way to do it without wrecking your gut with gluten! Don’t expect this paleo fettuccine alfredo sauce to taste exactly like the real thing (you will be disappointed) but it’s a great substitute for when those cravings come calling. You can cut the chicken into chunks and mix right in with the fettuccine (like I have in the recipe) or serve the fettuccine as a side dish for the chicken. - 1 pack Cappello's fettuccine
- 1 lb organic boneless chicken breasts cut into chunks
- 1-2 tbsp grass-fed butter or ghee
- 1-2 tbsp Flavorgod Garlic Lover's seasoning
- 3 tbsp Kasandrinos extra virgin olive oil
- 2-4 garlic cloves minced
- 1 1/2 cups cashew milk
- 4 tsp cassava flour
- 5-7 tbsp nutritional yeast
- 1/4 tsp oregano
- 1 pinch of nutmeg
- salt and pepper to taste
- Heat up olive oil in a large skillet, over medium heat
- Add in garlic and saute until fragrant
- Stir in cassava flour for about a minute, until it's thick
- Slowly pour in cashew milk
- Add salt, pepper, oregano, and nutmeg. Stir until creamy and thick (let it bubble)
- Turn off heat and stir in nutritional yeast
- Set aside sauce
- Heat up butter or ghee in a skillet, over medium heat, and add in the chunks of chicken
- Season with Flavorgod and mix everything around
- Cook Cappello's fettuccine according to instructions, or use paleocupboard.com's paleo pasta
- Add fettuccine to pan with chicken
- Pour sauce over fettuccine and chicken and mix everything together
