I love the holiday season! Christmas is my favorite holiday. I love indulging in all the seasonal flavored treats like gingerbread and eggnog. In this recipe, I’ve combined my two favorites: gingerbread and eggnog together to make brownies. I always used to go to Starbucks and get gingerbread lattes, so I’m definitely going to create a healthier version of that too. I’m almost done with my Christmas shopping as well. I can’t wait to get a tree, wrap all the gifts and put them under the tree. Christmas is always a fun and exciting time that makes the cold weather a little more bearable (although I wouldn’t mind a warm Christmas at all). Ingredients:
1 cup Enjoy Life Chocolate Chips
1/2 cup eggnog (coconut milk, almond milk, or grass-fed)
1/2 cup eggnog (coconut milk, almond milk, or grass-fed)
1/2 cup tapioca starch
2 eggs
1 tsp vanilla extract
1/4 cup grass-fed butter, melted
2 tbsp molasses
1 1/4 cup almond flour
1/2 cup coconut flour
1 tsp coconut sugar
3/4 tsp ground ginger
1/2 tsp baking powder
pinch of salt
Procedure:
1. Pre-heat oven to 350
2. Melt chocolate & eggnog in a pan on low heat
3. Pour chocolate & eggnog into a large mixing bowl
4. Add in eggs, eggnog, vanilla extract, butter, and molasses
5. Mix well
6. Add in almond flour, coconut flour, tapioca starch, ground ginger, baking powder, coconut sugar, and salt
7. Mix well
8. Pour batter into a greased 8×8 baking pan
9. Bake 25-35 minutes, until toothpick comes out clean
