Everyone deserves a muffin once in a while, and if it’s a chocolate chip muffin that’s even better! You only live once, so you might as well enjoy it. These chocolate chip muffins are gluten-free, grain-free, dairy-free, corn-free, and soy-free, so you don’t have to sacrifice your health while enjoying the occasional muffin. I use Enjoy Life chocolate chips and Sunbutter. I’ve always been a believer in “paleo treats” and recreations of comfort foods. There’s no reason you should have to sacrifice the enjoyment of eating in order to take care of yourself. Moderation is important as well, even too much of a good thing is bad. It’s all about balance and discovering what works for you as an individual. I’m three years into my paleo journey, and I’m still figuring out what my perfect diet is. The path to optimal health is ongoing but it is so worth it. My weight has been up and down (pretty much my whole life) and whenever it goes up I get depressed about it. I’m trying to not stress so much about my weight and just focus on my health, but I feel so much happier when I am thin. I know once I heal my digestive system completely I’ll start feeling better. My goal is to be more positive, listen to my body, and not dwell so much on weight gain. I know body image issues are a struggle that many people deal with, and living a paleo lifestyle is a great way to gain more self confidence. If you love yourself and treat your body with care, it will treat you with care.
- 1 cup almond flour
- 1/3 cup tapioca flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- pinch of salt
- pinch of cinnamon
- 1 cup sunflower butter
- 3 eggs whisked
- 1/2 cup raw honey
- 1/3 cup coconut oil melted
- 1 tsp vanilla extract
- 1/2 cup Enjoy Life chocolate chips
- Pre-heat oven to 350
- Fill muffin tray with liners
- Mix the dry ingredients together in a bowl well, breaking up any clumps
- Mix the wet ingredients with an electric mixer
- Pour the wet ingredients into the dry and mix together
- Fold in chocolate chips
- Pour batter into muffin liners
- Bake for 15-20 minutes, until toothpick comes out clean
