I love scallions. I love pretty much anything in the onion family. So, naturally I made a tuna salad full of vegetables from the onion family. Thinking of what to have for lunch on paleo can be tricky, especially if you don’t have access to a microwave to bring leftovers to work. This is a delicious cold lunch. You can eat it with lettuce wraps, paleo almond crackers, plantain chips, or anything else you could think of! I usually have mine with either paleo almond crackers or plantain chips because I like to add a crunch. This recipe is easy to put together, especially if you use Sir Kensington’s mayo, Primal Kitchen Mayo, or have a homemade mayo already on hand. You can make your life even easier by using dried herbs instead of fresh (which I do much of the time).

Ingredients:
1 can of tuna, drained
1-3 tbsp paleo-friendly mayo
1-2 tbsp scallions, chopped
2 tsp dill, chopped
1 tsp chives, chopped
1/4 tsp onion powder
1/4 tsp turmeric
salt & pepper, to taste
Procedure:
1. Break up the tuna in a bowl
2. Add all the other ingredients
3. Mix everything together well and break up tuna more
