Ingredients

acorn squash

grass-fed ground beef
1/2
yellow onion, chopped

garlic cloves, minced

organic Adobo seasoning

Kettle & Fire bone broth

coconut milk
1/4
cup
mushrooms, chopped
1/4
cup
broccoli, chopped
Instructions
Pre-heat oven to 400 degrees
Cut tops off of acorn squash & scoop out seeds
Put acorn squash in a baking pan and cook in oven for 30 minutes
While acorn squash is cooking, add ground beef, onions, garlic, and adobo to a large saute pan on medium/high heat
Break up meat and mix everything together
When beef begins to brown and onions begin turning translucent, add in coconut milk and bone broth
Mix everything together
Add in broccoli. Mix everything together
Add in mushrooms. Mix everything together
Lower heat and cover
Simmer for about 10 minutes
Turn off heat
Remove acorn squash from oven, but leave the oven on
Stuff each squash with the beef and veggie mixture
Return to oven for 30 minutes or until fork goes through squash easily
Remove from oven and serve!
