I love honey mustard. Especially on chicken. Since going paleo, honey mustard is something I have given up, so I decided to try and make a dish that includes a healthy version of honey mustard. Honey mustard chicken in a crockpot? Even better. The simpler, the better. This recipe is so easy, it takes relatively no time in the morning and is ready for you when you get home. I paired my chicken with zucchini noodles in sundried tomato pesto sauce (I’m also a big fan of pesto).

Ingredients:

1.5 lb boneless chicken thighs
1 tbsp raw honey
3 tbsp dijon mustard
1 tbsp olive oil
2 tbsp bone broth
1 tsp garlic powder
½ tsp onion powder
1 tsp rosemary
salt & pepper to taste

Procedure:

1. Put all ingredients except chicken in a small bowl & mix together.
2. Dip each piece of chicken into the marinade & place chicken in crockpot.
3. Pour remaining marinade over chicken.
4. Cook on low 8 hours.
