Strawberry Kiwi Muffins (Gluten Free)

Strawberries and kiwis are my two favorite fruits and they’re a common flavor combination. I thought it might be interesting to try them together in muffins – blended into the batter. To be honest, the strawberry kiwi flavor is just slightly in the background of these muffins, although I definitely enjoyed them. These muffins are pretty dense and filling made with almond flour, cashew butter, and coconut oil. Try them for a gluten free breakfast on the go or as a snack!

Raspberries & Cream Protein Smoothie

I don’t drink protein shakes/smoothies all that often. I prefer eating actual food. But every so often, I’ll either crave having a shake or be very pressed for time and need it in a pinch. Eating on the go is definitely not ideal, as we should be relaxed while we are eating in order to properly digestion our food. But, life happens and sometimes this is the only way to get our fuel in.

I included almond milk yogurt to this smoothie recipe to add in some probiotics and creaminess. This smoothie is also great left in the freezer and eaten as a protein ice cream!

The protein powder that I use is Reserveage Grass-Fed Whey.
The collagen I use is Vital Proteins Pasture Raised Collagen Peptides.
The jam I use is St. Dalfour Red Raspberry.
The yogurt I use is Kite Hill Vanilla or Plain.

Hormone Balancing Smoothie

Hormones got you feeling out of sorts? This smoothie contains hemp seeds and maca to balance hormones. Hemp seeds are a great source of omega 3 and omega 6 fatty acids, which are anti-inflammatory and promote hormone health. Maca is used for boosting libido, energy, and hormone balance. Together with coconut milk/cacao butter (healthy fat) and banana (healthy carbohydrate), this blend makes the perfect treat for anyone seeking to balance hormones.

Cinnamon Chocolate Cranberry Sauce

I can’t believe Thanksgiving is almost here! I can’t wait 😀 I made a new twist on the traditional Thanksgiving side –> cranberry sauce. I added cinnamon and chocolate chips and served it hot. Normally on Thanksgiving, I have cold sliced jellied cranberry sauce, which I also love.

This dish can be eaten along with Thanksgiving dinner or served as a dessert.

What are you making for Thanksgiving? Tell me in the comments!

3-Ingredient Banana Ice Cream (Dairy-Free)

This recipe is soooo easy, yet so satisfying. The frozen banana texture is perfect to mimic the texture of ice cream and adds natural sweetness, along with coconut milk for creaminess. You can always experiment with this and add more ingredients such as chocolate chips, nuts, or Cappello’s cookie dough for an indulgent treat!

Paleo Pumpkin Spice Pancakes

Pumpkin spice pancakes with pumpkin spice coffee is one of my absolute favorite things about fall! Add some bacon for the perfect breakfast. When I was food shopping, I came across a new grain free, paleo friendly pancake mix and decided to try it and make them pumpkin spice and top them with apple butter for a super delicious fall breakfast!

The flour I used is Pamela’s Grain Free Pancake Mix

Warm Spiced Apple Slices

The fall is just beginning and I’m already into pumpkin spice everything, but since apple picking season comes and goes so quick, I figured I’d do a super, super easy apple recipe! This would be perfect to make after you get home from a day of apple picking and you’re tired but excited to make something with your freshly picked apples. It’s just 3 simple ingredients and 2 simple steps!

On an exciting side note, look what I found at the Supermarket yesterday:

Toasted Almond “Iced Coffee”

dandy blend drink 2

Dandy Blend is an instant “coffee alternative” made from dandelions. It tastes similar to coffee, but it’s caffeine-free. Dandelions are great for the liver and detoxifying the body. I like to drink Dandy Blend when I’m craving coffee later in the day. I normally only drink two cups of coffee in the morning, so I’ll have this toasted almond flavored drink at night for a treat.

It’s also a great alternative to people who love coffee but can’t drink it.

Paleo Pumpkin Pie (Nut-Free)

pumpkin pie 2Thanksgiving is just around the corner! If you wanna keep it paleo this year, include my paleo pumpkin pie in your dessert line-up! I use Otto’s cassava flour to make the crust. It’s my new favorite baking flour. It subs 1:1 for wheat flour and has a great texture for baked goods. You have to order it online – but it’s free shipping!

You know what really irks me? When I see Christmas stuff out before Thanksgiving – and people going “Black Friday” shopping on Thanksgiving! Why do people feel like need to skip straight from Halloween to Christmas and forget about Thanksgiving? Thanksgiving is an important holiday. We should always be thankful for everything we have in our lives – you never know when it might be taken away. Just some food for thought. I love Christmas too, but let Thanksgiving have it’s day to shine first. And come on, Thanksgiving is awesome, you get to eat all the food!

My Shaved Brussels Sprouts are also the perfect accompaniment to your turkey, potatoes, and cranberries. You may also like my Pumpkin Butter, Chocolate Pudding Pie, and Pumpkin Spice Brownies.

Soft & Chewy Pumpkin Chocolate Chip Cookies

pumpkin chocolate chip cookies 5

These pumpkin chocolate chip cookies are soft & chewy. They’re also grain and nut free. I originally created this recipe to make pancakes, but that was a major fail. As I mixed everything together, instead of turning out like pancake batter, I had a thick dough. Sooo, I decided to make cookies and add chocolate chips. They’re very lightly sweetened and make a great fall dessert. Once it hits September, I’m all about pumpkin everything. I’m your stereotypical white girl who loves fall. These cookies would pair well with my Pumpkin Spice Coffee and a crisp fall day 😉
