This recipe is great for a quick on the go breakfast in the morning. Make them the night before and then just grab and go in the morning. This is an easy recipe and is fairly quick. The muffins bake is 15-20 minutes, so you can wash the dishes while they’re baking and then they’ll be done shortly after that. These muffins taste great and are filling. Some paleo people don’t consider treats and baked goods as strict paleo. Although it is better to eat more real, whole foods most of the time, I believe it is okay to have treats made with paleo-friendly ingredients in moderation. I eat them more than I should, I just love sweets. Non-paleo guests will probably still choose regular muffins over these, but I do think they would like them. Ingredients for paleo baking cost a lot more than standard baking ingredients. I buy in bulk on amazon.com for better pricing.

 

Ingredients:

½ cup hazelnut flour
½ cup almond flour
1/3 cup coconut flakes
½ tsp baking soda
½ tsp baking powder
pinch of salt
pinch of cinnamon
1 cup almond butter
3 eggs whisked
¼ cup raw honey
¼ cup raw coconut nectar
1/3 cup coconut oil melted
½ cup St. Dalfur four fruits (or any flavor you like) spread

Procedure:

Preheat oven to 350
Fill muffin tray with liners
Mix the dry ingredients together in a bowl well
Mix wet ingredients together well in a separate bowl
Pour wet ingredients into dry ingredients and mix well
Bake for 15 to 20 minutes, until toothpick comes out clean.
