Jill

Jill McEvoy is a Certified Nutritional Therapy Practitioner. She spent years smoking cigarettes, eating fast foods, processed foods, and every man-made food imaginable. This lifestyle was accompanied by pretty severe IBS (Irritable Bowel Syndrome), PMS (Pre-Menstrual Syndrome), and acne. While getting her BS in Criminal Justice, she learned about the paleo diet and discovered the power of food on our health firsthand. After receiving her Bachelor of Science, she realized her true passion was for nutrition, wellness, and fitness and returned to school to become a Nutritional Therapy Practitioner. Jill hopes to inspire others to improve their lives with nutrition and lifestyle changes & discover how great they can feel.

Stress Got You Down?

Do you live a stressful lifestyle? Are you always tired or constantly feel the need to drink coffee to get through the day? You may be suffering from Adrenal Fatigue, which is caused by the amount of stress in our lives exceeding our adrenal glands ability to balance the stress. Our modern lifestyles are full of constant stress, which is a lot of work for the adrenal glands. Stress is more than just emotional/mental- it is anything that is causing…

Paleo Chocolate Pudding Pie (Nut-Free)

Growing up, for every holiday my grandma would always make tons of food. She would make spanokopita from scratch (which the whole family would devour) and tons of desserts to bring over. One of my favorite desserts that she would make was Chocolate Pudding Pie. I always looked forward to it with her homemade whipped cream on top. After she was diagnosed with Alzheimer’s Disease, we started buying spanokopita from Greek shops and there was no more of her homemade…

Healthy Travel Tips – Vero Beach, Florida

Last weekend I went to Vero Beach, Florida for a family reunion for my mom’s aunt’s 90th birthday. Normally when I go on vacation I overindulge in everything. I can be gluttonous. When I’m home it’s very easy for me to stay healthy, but traveling can be a huge stress for the body. When I’m out of my normal routine, and get into “vacation mode” I eat very poorly (and usually drink a bit more alcohol than I probably…

Fettuccine with Cheesy Meat Sauce

This recipe is based off one of my favorite dinners growing up that my mom would make. She called it “Slop” and it consisted of egg noodles, ground beef, American cheese, onions, peppers, and brown gravy from a jar. I wanted to make a healthier version of one of my childhood favorites that I had been missing. I replaced the egg noodles with Cappello’s fettuccine (you can also use paleocupboard.com’s pasta recipe) and the American cheese with grass-fed gouda…

Chocolate Chip Sunbutter Muffins

Everyone deserves a muffin once in a while, and if it’s a chocolate chip muffin that’s even better! You only live once, so you might as well enjoy it. These chocolate chip muffins are gluten-free, grain-free, dairy-free, corn-free, and soy-free, so you don’t have to sacrifice your health while enjoying the occasional muffin. I use Enjoy Life chocolate chips and Sunbutter. I’ve always been a believer in “paleo treats” and recreations of comfort foods. There’s no reason you should…

Truffle Mashed Cauliflower

Truffles make everything better. Do yourself a favor, if you’re ever eating at Seasons 52, order the arugula truffle salad. You can thank me later. Truffle potatoes are another one of my favorites. While I do still eat potatoes, I love to make mashed cauliflower. It’s so delicious and lower in carbs. I make different variations of mashed cauliflower and usually just eyeball it and taste-test while I’m making it. I was asked about how I make my mashed cauliflower,…

Grain-Free Cauli-“Rice” Balls

I haven’t eaten a rice ball in years. Even before paleo I only ate them on occasion because I would normally just get pizza when I went to the pizzeria. Rice is a food I’ve always loved, but have only eaten it very rarely since starting my paleo lifestyle. My cousin gave me the idea to make a paleo version of Italian style rice balls and I thought that was an awesome idea. If you can’t tolerate dairy, you can…

Paleo Salmon Teriyaki

I’ve been on my journey to optimal health for a little bit over 3 years now. Eating paleo made me feel much better at first, but I must admit I eat way too much paleo sweets and treats. I would always tell myself, “it’s okay, it’s paleo.” Now that I am studying nutritional therapy, I am finally coming around to accept that no, that really doesn’t make it okay. Once in a while, as a treat, yes that’s fine, but…

Chicken Thighs with Mushroom Gravy

I’ve been more busy than usual since I started the Nutritional Therapy Consultant program through NTA, so the crockpot is a lifesaver! It’s only been a week since the program started, but I am loving it so much already! A lot of the introductory material was information that I already knew from my own research, but I learned even more and I’m so excited to share that information with all of you. I’m really excited to see how I…
